Where’s the Wine: Meals That Need That Splash of Vino

Most of the time, when we say that we’re pairing wine and dinner, we mean that we’re drinking a glass of wine that compliments the food we’ve prepared. But today, we’re talking about cooking with the wine – although you can take a sip or two as you create your masterpiece. Let’s check out some of our favorites!

Chicken Marsala

This recipe is perfect for a simple weeknight dinner. It mainly consists of chicken and mushrooms and can be served with a side and vegetables or alone. To make this wine-filled dish, you’ll need:

  • 4 skinless, boneless, chicken breasts (about 1 1/2 pounds)
  • All-purpose flour
  • Kosher salt and freshly ground black pepper
  • 1/4 cup of extra-virgin olive oil
  • 4 ounces of prosciutto, thinly sliced (optional)
  • 8 ounces of crimini or porcini mushrooms, stemmed and halved
  • 1/2 cup of sweet Marsala wine
  • 1/2 cup of chicken stock
  • 2 tablespoon of unsalted butter
  • 1/4 cup of chopped flat-leaf parsley

Begin by pounding out the chicken with a flat meat mallet until it is 1/4 inch thick. Then fill a shallow dish with flour and season with the salt and pepper. While the oil is heating up in a large skillet over medium heat, take the chicken and coat in the flour mixture, making sure to shake off the excess. Then place into the pan and fry on each side until golden brown. After all the chicken has been cooked, remove from the pan and set it to the side.

In the same skillet, add the prosciutto and saute for 1 minute. Add the mushrooms and cook until they are browned or for about 5 minutes. Then add salt and pepper before pouring in the Marsala wine. Boil for a few minutes before adding the chicken stock. Once you’ve done that, let simmer and then add the butter and chicken to the pan. Simmer for a moment before garnishing with parsley and serving!

Shrimp and Crab Bolognese

Traditional bolognese is amazing, but it is taken to the next level by adding some of our favorite seafood – shrimp and crab! This dish consists of shrimp and jumbo crab meat served with tomato and white wine cream sauce over homemade pappardelle pasta.

Peach Whiskey Pork Filet

This tender cut of pork is cooked to perfection and comes wrapped in bacon. To top it off, it is coated in a homemade peach whiskey sauce, giving it both a sweet and savory flavor. Served with your choice of starch, vegetable, and house salad, this is sure to be your new summer favorite.
